Granola bars with seaweed - a naturally sweet and healthy family treat.

Since we are currently in Norway and the drugstore with our most favorite berry oat bars is not around the corner, we thought to make the granola bars ourselves. It is a lot easier than expected and you can play around with the ingredient list to give it a Christmas touch and exchange the dried fruits to season and gusto.
The result is a highly nutritious, naturally sweetened and wonderful treat that filled the first days of the advent calendar for our boys and is also a nice self-made little gift idea.
The added seaweed give it a very light salty breeze and enrich the bar with more important nutrients like iodine, calcium, magnesium, potassium and zinc. The basis are oats with its wonderful complex carbohydrates and vitamin B complex. Flax seeds add some important fats, extra fiber and give it a nutty taste. Having all this in mind the bar becomes a real brain food and is very well suited for the school break as well. It is especially great for those kids full of energy, who sometimes don’t seem to have the time to eat. Below is the list of the ingredients we used.

Preparation for 12 bars:
1) Mix the dry ingredients
2) Mix the wet ingredients, pour them oder the dry mass and mix it carefully with a spoon.
3) Preheat the oven to 170 °C hot air circulation.
4) Spread the mass in a baking dish lined with baking paper till it is a firmly pressed square.
5) Bake for about 15 min. till everything is slightly golden / light brown.
6) Carefully cut the mass into bar slices, as long as they are hot, to avoid breakage of the bar.
7) Let them cool down to become rigid.
8) Pack them up and store in a dry place.
9) Enjoy whenever you crave something sweet or need a break.
For recipe variations you could exchange the cranberries for raisons, date pieces or dried apricot bits. Just roughly stick to the amounts suggested above, so that the bar does not break that easily. You can also use up the 60g flax seeds and mix them with other fine nuts or seeds like fine almonds, hazelnuts, walnut pieces or sunflower seeds. I often use half flaxseeds and half roasted sunflower seeds 😊 A gingerbread spice mix is also very much recommended for a change.
