Green vegan pesto meets dulse or I sea bacon from Seamore
A fancy looking, but really easy and satisfying vegan family dish.
The green pestos are something we started a with the kids, since it is an easy way to get some more greens into them. We love to go with the seasons and started in April with some nettle pesto, continued with our zero waste carrot green pesto. All those variations are easy and mild in taste. And the regional grocery stores here in Denmark and Sweden had a wide selection of herbs and ecological parsley was the choice of our children. It is also due to the fact that I haven’t found that many vegan bread spreads and pesto is also nice on a fresh bun in the morning.

How to prepare the dulse?
I like to first soak the dulse seaweed (5-10 minutes in cold water) and then let it simmer on low heat in coconut with a pinch of salt, but it also possible to put in oil straight dry from the bag. Please let me know how you like it better.
How to prepare the pesto?
Put the parsley, almonds or sunflower seeds with oil and the lemon juice and some salt in a small food blender and mix until it is a smooth paste, add some more oil or little water and seeds if needed, till you have a pesto with a nice consistency.
Cook the spaghettis and pile them up on your plate. Garnish your dish with the vegan bacon, tomato and pesto and you are ready to enjoy.
